The Star-Belly Sneetches is one of my favorite Dr Seuss stories! When I was shopping for the ingredients for the Star-Belly Sneetch cupcakes for some reason I thought the stars were yellow, so I picked out a Star Fruit and thought I was ready to go. At the last minute when I was frosting the cupcakes I realized their bellies were yellow, but the stars were green. So what’s a Mom to do when I mess up? Improvise! I took a tiny dab of green food coloring a rubbed a slice of the star fruit in it. Voila! Green Stars! For less mess I recommend using green fruit rollup and cutting out stars or outline a star in green frosting, and then fill in with more green frosting using a star piping tip.

Dr Seuss “Sneetch” Ingredients:
  • Cake Mix
  • Frosting
  • Yellow food coloring
  • Green fruit roll up or green food coloring and star piping tip
  • Star cookie cutter (unless you are very artsy and can cut a star free hand)

Dr Seuss “Sneetch” Directions:
  1. Bake Cake Mix as directed.
  2. Color frosting for the cupcakes yellow (before you color it all yellow, put some aside if you are going to use frosting and green food coloring for the star portion on top)
  3. Frost cupcakes
  4. Add green star on top to some of the cupcakes
