Antipasto Kabobs – Great for New Year’s

Antipasto Kabobs

Gatherings of friends and family almost always involve food, and it can sometimes be difficult to get creative with what you’ll serve. This recipe takes the traditional flavors of antipasto and presents them in a new way… on a kabob! These appetizers are easily made up to three days in advance, and can be covered and refrigerated until you’re ready to serve them.

Antipasto Ingredients:
  • 5 pounds salami, thickly sliced and cut into cubes
  • 3 pounds provolone, thinly sliced
  • 36 Mediterranean olives
  • 36 skewers

Antipasto Directions:
  1. Lay out the provolone slices and cut small, round circles out of each using a small cookie cutter. Alternatively, use a knife to cut squares.
  2. Place the ingredients onto the skewers, alternating ingredients so each kabob has salami, provolone, and an olive.
  3. For a varied presentation, experiment with various types of skewers. Also consider additional ingredients such as artichokes, flavored olives, marinated peppers, or other similar ingredients.
