Beef Stroganoff On A Budget

This beef stroganoff casserole really goes far and it’s delicious. It easily feeds a large family, it’s great for pot lucks and can easily be cut in half if needed. Freezer friendly, add sour cream after you’ve defrosted it. I used hamburger and penne pasta instead of egg noodles because I keep both in my stockpile and hamburger is a cheaper option than other cuts of beef when stretching a budget. I used store brand french fried onions and sour cream, not only because they are cheaper, but they are also good.

As always, play with this recipe and make it your own. If you don’t like mushrooms, don’t add them, substitute ground beef for ground chicken or turkey, if you like spicy food add a little red pepper flakes etc. Preheat oven to 350, grease 9 x 13 pan.

Beef Stroganoff Ingredients:
  • 2 lbs 93% lean ground beef
  • 8 oz sliced mushrooms
  • 1 med onion, chopped
  • 2 garlic cloves finely minced
  • 2 Tbsp Worcestershire sauce
  • 2 c beef broth
  • 1 16oz sour cream
  • 1 can Campbell’s Cream of Mushroom soup, Healthy Request
  • 1 Tbsp Smart Balance or buttery spread of your choice (optional)
  • 1 3oz package french fried onions, I used store brand
  • 1 pkg pasta of your choice, cooked and drained
  • * salt & pepper to taste

  1. In a large skillet, I use a 16″ electric skillet, cook ground meat, onion, and garlic over medium heat until meat is browned and crumbles. Drain if needed.
  2. Return meat to skillet and stir in Worcestershire, mushrooms, and beef broth. Bring to a boil, reduce heat, and simmer for 15 minutes.
  3. Stir in soup, sour cream, salt and pepper. Remove from heat.
  4. Combine cooked pasta and butter, stirring until butter melts.
  5. Combine noodles and meat sauce. Spoon into prepared baking dish. Bake for 30 minutes.
  6. Top evenly with fried onions and bake for 10 more minutes.
