Bread Machine Rye Bread

This rye bread recipe is for a 3 cup capacity machine. I always use the larger option because I only use the dough function and let the bread rise the second time in a regular bread pan then bake it in the oven. I get a larger loaf, which stretches a little longer than the smaller sized recipes.

Rye Bread Ingredients
  • 2 1/4 tsp or one full packet yeast
  • 2 cups bread flour
  • 1 cup medium rye flour, found in most store or health food stores.
  • 1 1/2 Tbs coarsely ground cornmeal
  • 1 tsp caraway seeds
  • 1 1/2 tsp salt
  • 1 Tbs dark brown sugar
  • 2 Tbs unsalted butter
  • 1 1/2 Tbs dehydrated onion flakes
  • 3/4 cup water about 120-130 degrees
  • 1/2 cup buttermilk

  1. Place ingredients in bread machine in the order listed and set.
  2. If you choose to bake in the oven set it to dough only. Once the cycle has finished, gently shape dough on a floured surface and add to bread pan sprayed with oil, cover with a clean dish towel and let rise. I put mine on the stove top and set the over for 170 degrees during the rising process.
  3. Bake your rye bread at 375 for 30 minutes. All ovens vary so start checking at about 20 minutes. Once the crust is beautiful golden brown, remove from oven and let cool 15 min before slicing.

  1. This is just a simple recipe for the machine. Not many ingredients needed.

    1 1/8 cups warm water
    3 1/2 cups flour
    1 tsp salt
    2 tsp yeast

    Run it on just the basic cycle. You will want to check to see if you need to add flour or water.
    Now this is a basic recipe. It can be mixed up by adding in oil or sugar or margarine. It’s just a basic recipe that can take some alteration.
