Standing rib roast (aka prime rib) is an easy and low maintenance recipe. Being that this is my favorite recipe and it's on sale this week I'll be making this recipe for Christmas.  If you don't like mushrooms just omit them, the roast will still be delicious. If you cannot find dehydrated mushrooms you can make them yourself but plan ahead. Simply slice or dice mushrooms as thin as you can and dehydrate in a dehydrator or in your oven.  I then grind into tiny pieces/powder. Serves 6 Standing … [Read more...]

Beef and Chicken Enchilada Pie is the perfect leftover makeover recipe. This recipe is really more to show you that you can make something great by thinking outside the box. I had a little pot roast,  a little rotisserie chicken, a few corn tortillas, a couple TBSP of lite garlic and herb Allouette cheese and a handful of swiss chard. How did I ever come up with enchiladas out of that? Finely chopped greens like swiss chard and kale look like parsley so you can add more nutrition to your … [Read more...]

Spaghetti Sauce Slow Cooked In The Crock Pot It's no secret and my husband will tell you that I LOVE pasta! It is a downfall when watching the figure, but I grew up with a Dad and a Grandpa who cooked the best spaghetti sauce and mostaccioli. I did a few of my own variations to make it a tad easier. To this day, I think one of my favorite comfort foods is a big plate of pasta (any kind will do, lol) covered in a great spaghetti sauce. It's like it just hugs you and makes you feel better! Beef Stroganoff On A Budget

This beef stroganoff casserole really goes far and it's delicious. It easily feeds a large family, great for pot lucks and can easily be cut in half if needed. Freezer friendly, add sour cream after you've defrosted it. I used hamburger and  penne pasta instead of egg noodles because I keep both in my stockpile and hamburger is a cheaper option than other cuts of beef when stretching a budget. I used store brand french fried onions and sour cream not only because they are cheaper but they are … [Read more...]

Homemade Chili Pie

Homemade Chili Pie - I came up with this completely by mistake and it's a keeper to be sure. The plan was to make Tamale Pie but I defrosted my chili starter instead of enchilada sauce. In this case it turned out to be a good thing that I didn't label my container! For this recipe I included 2 cans of chili instead of my chili, well, because I messed up and didn't have a full batch on hand to use. I used left over beef pot roast but any meat will work for this wether it be hamburger, fresh or … [Read more...]

Crockpot Barbacoa Cooked To Perfection

Have you ever had Barbacoa?   Barbacoa is a beef brisket, slow cooked to perfection.  Barbacoa is great on tacos, in burrito bowls, served over rice, and even on top of a pile of mashed potatoes.  This meal is delicious!  It's great smoked slowly, but I prefer to use the slow cooker, as my schedule doesn't always allow for spending hours smoking a great cut of meat.  Try this recipe out, you won't be disappointed.  This is a family favorite in my house, and I'm sure it will be a … [Read more...]

Tacos are a favorite in our house. They are simple to make and easy to customize. Saving On Ground Beef

Saving on ground beef can be hard if  there is not a good sale going on at the time.  Meat is one of those item that usually does not come with a coupon so you have to get creative to find savings. A good sale is the time that I try to buy a whole cow if possible and stock up. My local grocery store was having a good deal on ground beef so I bought six 3 lb family packs. This usually will last my family of six until the store runs the sale again.  That’s a lot of ground beef but there are a few … [Read more...]
