Cheesy Roasted Broccoli Patties

I am always on the lookout for vegetable recipes especially broccoli and cauliflower side dishes. I am really glad that I found this recipe for Cheesy Roasted Broccoli Patties on Po’man Meals. It is very easy to make and tastes great. I altered it a bit by adding cauliflower and carrots that I had on hand and I used 2% cheese. I also added a pinch of chipotle pepper to spice it up a little. As you can see by the numbers below, this recipe was in good shape before I altered it. Yield 6 servings

Cheesy Roasted Broccoli Patties Ingredients:
  • 2 tsp canola oil
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 (12 ounce) bag frozen broccoli or broc/cauliflower blend, defrosted, cut into bite sized pieces
  • 3/4 cup panko breadcrumbs
  • 1/2 cup sharp 2% cheddar cheese
  • 1/3 cup parmesan cheese
  • 2 eggs, beaten
  • salt/pepper to taste

Directions:
  1. Preheat oven to 400 degrees.
  2. Heat oil in skillet and saute onion, carrots (if using) and garlic until translucent.
  3. Mix the rest of the ingredients together in a medium bowl.
  4. Add the onion and garlic, mix well.
  5. Line cookie sheet with foil and lightly grease.
  6. Form patties, about 1/2 cup of mixture, and place on foil.
  7. Bake for 15 minutes, flip and bake another 15 minutes or until brown and crispy. Enjoy!
