Chicken Enchiladas with Authentic Style

Who doesn’t love a good Mexican chicken dish? These chicken enchiladas are the best authentic style enchiladas there are! Not only are they cheap and easy to make, but they taste fantastic too! If you ordered the Zaycon chicken deal that Wizard Lisa shared with all of us, this is definitely a great recipe to use up some of that great chicken. Also, these freeze extremely well. You can make extras to freeze for a quick meal later in the month. This recipe has been passed down, and tweaked to perfection.

Chicken Enchiladas Ingredients:
  • 2 lbs. Boneless Chicken Breasts, boiled and shredded
  • 3 Cans Enchilada Sauce
  • 1 Large Onion, diced
  • 1 Large Pack of Corn Tortilla’s
  • 2 8oz. Bags of Shredded Cheddar Cheese
  • 1 Small Can of Chopped Olives
  • 4 Roma Tomatoes, diced
  • Sour Cream

Chicken Enchiladas Directions:
  1. Preheat your oven to 350 degrees.
  2. While the oven is preheating, get a large mixing bowl and combine shredded chicken, onions, 1 and a half bags of the cheddar cheese, chopped tomatoes, and chopped olives. Set aside your mix.
  3. Warm a pan with vegetable oil to fry the corn tortillas in. When frying the corn tortillas, make sure you fry them individually until a light, golden brown. After you fry the corn tortilla’s, place them into a bowl of red enchilada sauce to get them nice and coated in sauce.
  4. Spread some enchilada sauce into the bottom of a 13 x 9 casserole dish to prevent your enchiladas from getting dried out.
  5. Stuff each tortilla with a good spoonful of the mixture, and roll them tightly. Arrange them tightly into your casserole dish. I tend to squeeze as many in as I can. It helps them to hold their shape, feeds my big family, and the kids love them!
  6. The last and final step is to top the enchiladas with the remaining sauce and cheese.
  7. Bake at 350 degrees for 25-30 minutes until the cheese and sauce is bubbly.
  8. Remove from oven, and let set for 10-15 minutes.
  9. Top these delicious enchiladas with sour cream and green onions and dinner is served.
