Coffee Cup Coffee Cake

Try this coffee cup coffee cake. I get giant coffee mugs as gifts all the time and I don’t know why. I love coffee, but I don’t want to drink a bucket of it. I’m fine with a cup at a time. Here’s something great you can make in those giant mugs that are too big for coffee. These cakes are ridiculously delicious, and it’s a single serving, so you don’t have the rest of the cake staring you in the face after you eat a slice. This is a quick, easy recipe you can make in just a few minutes. This took me about 3 minutes to throw together and a minute and a half in the microwave. It’s that simple!

Coffee Cup Coffee Cake Ingredients

For the crumb topping:

  • 2 tablespoons dark brown sugar
  • 2 tablespoons flour
  • 1 tablespoon butter, softened
  • pinch cinnamon
  • pinch salt, optional (I use salted butter instead)

For the cake:

  • 1 tablespoon butter, softened
  • 2 tablespoons dark brown sugar
  • 1/2 egg (1 egg beaten and divided)
  • 2 tablespoons sour cream (I use fat free)
  • 1/4 teaspoon vanilla
  • 1/4 cup self-rising flour
  • 1/4 teaspoon cinnamon
  • 1 teaspoon preserves (optional)

Coffee Cup Coffee Cake Directions
  1. For the topping, mix the ingredients together and pinch to make crumbs form.
  2. For the cake, mix butter and sugar together in a large measuring up until creamy.
  3. Add egg, sour cream, vanilla and beat until blended (I use a whisk).
  4. Add flour and cinnamon, whisk until smooth.
  5. Pour half the batter into a coffee mug, add half the topping, top with batter and other half of crumb topping.
  6. Put in microwave on high for 1 minute 30 seconds. Top with powdered sugar.

I am not a microwave-and-eat person by any means. However, this cake is fantastic. Enjoy!
