Cranberry Delight

This is one of my family’s favorite holiday dishes. We make this Cranberry Delight at Thanksgiving and Christmas. I usually have to make a double batch, as everyone wants some to take home with them.  As a side this makes about 15 servings. However, after the main meal, my family eats it by the bowl. It is really easy to make, and  every time I take it somewhere I get asked for the recipe.

Cranberry Ingredients:
  • 1 6oz box of cherry flavored Jello (do not make the jello according to box directions)
  • 1 cup of sugar
  • 2 cups boiling water
  • 3 large or 4 medium apples (peeled and cored)
  • 1 can crushed pineapple (drain juice)
  • 1 bag of cranberries
  • 1 cup chopped nuts (walnuts or pecans-whichever you prefer)

Cranberry Directions:
  1. Start by mixing the jello powder and sugar in a large bowl.
  2. Add 1 cup boiling water and stir until all powder and sugar is dissolved.
  3. Place in freezer or fridge so that it will begin to set
  4. While the jello is setting:
  5. Chop the cranberries and apples – I have a small hand crank food processor that I use.
  6. Add the chopped nuts and crushed pineapple and mix it all together.
  7. After about 30 minutes you can add this mixture to the jello and stir well.
  8. You will want to stir it a few more times as it is setting just to make sure all the good stuff doesn’t sink to the bottom.
  9. Let set for about 4 hours (overnight is best) serve cold.
