Slow Cooker Bacon Bean Soup

This slow cooker bacon bean soup recipe looks super easy to make. Add in the vegetables below or substitute with veggies you like better. You could even try a different kind of bean if you wanted. Any way you do it, this cool weather meal is sure to please!

Bean Soup Ingredients:
  • 32 oz Dried Northern Beans
  • 1 lb Bacon
  • 2 Onions diced
  • 1/2 lb Carrots diced
  • 4 stalks Celery diced
  • 4 cloves Garlic minced
  • 4 cup Water
  • 4 cup Chicken Broth
  • 1 Bay Leaf
  • 1/2 tsp Crushed Red Pepper
  • Salt & Pepper (to taste)

Bean Soup Directions:
  1. Sort beans and remove any debris or rocks.
  2. Rinse beans under cold water.
  3. Fry bacon in skillet till crispy.
  4. Add all ingredients to slow cooker.
  5. Cook on high for 2 hours. Then cook on low for about 6 hours (until beans are tender)
  6. Remove bay leaf.
