How to Freeze Leftover Cake

leftover cakeEvery year my Nanny Jay makes my daughter’s birthday cake. They are amazing and we don’t get them often enough, so we don’t want to waste any of the leftover cake. The other side of that coin is that I also don’t want to eat cake for days on end. Not that it’s not good enough to do just that, but it’s not a great idea for the waist.

I’m a sweet junkie so if there is cake out in the house I will eat it! So I asked my aunt if the cake could be frozen and she gave me the following instructions. You can do this with slabs of cake; I slice into individual servings and freeze. This allows us to only pull out the amount of cake we are going to eat and it’s great for portion control.

  1. Cut into desired freezing size.
  2. If you want the icing to look as nice as it did when first presented to you, then you will want to place the cake in the freezer unwrapped for a few hours until the icing hardens. Personally I’m not too concerned about the look so I just go straight to the next step.
  3. Wrap the pieces well in cling wrap. You want to wrap the cake tightly. The better it is wrapped, the better it will taste when you take it out. The thing to remember when freezing cake is- the less air the better!
  4. Place the individually wrapped pieces into a freezer bag or container. If you are using a freezer bag, squeeze out as much of the air as possible. When using a container, use one as close to the size of the cake as you can. You want as little air as possible.
  5. When you are ready to eat, just pull the desired amount out and defrost at room temperature. In about an hour your cake is ready to eat.

This is a great way to have little waste of your cake. I’ve been doing this for the last few years and the cake comes out just as good as when we put in the freezer. It’s a great way to have the leftover cake you love for months after!

    We have always done this! It is a great way to have birthday cake when there is no birthday celebration going on! Also, any cake, that is way too much to eat in two days. goes in the freezer! Plus, we always seem to enjoy it more later on!
