Garlic Parmesan Mashed Potatoes

These Garlic Parmesan mashed potatoes are sure to be a huge hit with everyone in the family! For faster cooking time, dice all the potatoes into small pieces.

Garlic Parmesan Ingredients:
  • 3 lbs red bliss potatoes
  • 2 tablespoons kosher salt
  • 2 cups half and half
  • 6 cloves of minced garlic
  • 1/4 cup of butter, cut into pieces
  • 6 ounces of grated Parmesan

Garlic Parmesan Directions:
  1. Partially peel the potatoes (a little of the skins add a nice texture to the potatoes). Chop the potatoes and add them to a large pot. Cover with water and add the salt.
  2. Over medium-high heat, bring the pot to a boil. Reduce the heat so that the pot doesn’t boil over and cook until the potatoes are fork tender.
  3. Drain the potatoes.
  4. Return the pot to the burner (on medium still) and add the half and half and garlic. Bring the half and half to a simmer. Add the butter and remove from the heat.
  5. Add the potatoes and half the Parmesan cheese. Mash the potatoes until you have the desired consistency.
  6. Preheat the oven to Broil. Spoon the potatoes into an oven-safe dish and top with the remaining cheese. Slide under the broiler and cook just until the cheese melts and turns golden. Remove and serve.
