Weighing in Wednesday – A New Favorite Meal

weighing in WednesdayHere’s my Weighing in Wednesday revelation: I don’t cook. I’m capable of cooking, but I choose not to. Luckily for me hubby likes to cook so when he is home he does most of it. However, when he is gone its up to me. Usually meals are quick fix convenience stuff or take out. Since I’m trying to lose weight, I’ve cut back on eating out, but I’ve found myself in a cooking rut. Wizard Michele told me about LiveBetterAmerica.com (NLA). ¬†They have some great information and a lot of wonderful looking¬†recipes.

I have a garlic shrimp pasta recipe I love, but it calls for a large amount of butter. This past weekend I made the “Healthified Garlic Shrimp Pasta” recipe from livebetteramerica.com. It was amazing!!! The best part… it was super easy! I had it done and ready in about 30 minutes. I will definitely be making this recipe again. I didn’t miss the large amount of butter in the original recipe I have.

I did make a few adjustments. I halved the recipe since it was just me home. Also, instead of regular olive oil, I used some garlic infused olive oil we had. I skipped the white wine and used chicken broth in its place. I was a little leery of using multigrain pasta instead of regular white pasta, but I decided to give it a shot. I used Barilla Plus Multigrain pasta and couldn’t tell the difference.

The next time I make it I will skip the tomatoes in it, I didn’t really dig on that part. I will also be increasing the amount of baby spinach in it. It tasted really good and its a good way to “sneak in” a leafy green. Wizard Michele suggested trying chicken in place of the shrimp, I think I may try that one time.
