Broccoli Cheddar & Sweet potato Soup

Broccoli Cheddar Soup Ingredients:
  • 2 to 3 T coconut oil
  • 1 stalk celery
  • 2 medium carrots
  • 1 large sweet onion diced
  • Approx. 4 to 5 cups of fresh broccoli (trim off florets, peel wood stem, and chop the rest of the stalk
  • 1 large sweet potato peeled and cut in half
  • 2 garlic cloves, grated
  • 32 oz. low sodium vegetable or chicken broth
  • 1 can fat free evaporated milk
  • 1 cup of regular Almond milk
  • 1 cup 2 % milk, OR 1/2 cup of half & half
  • 2 cups grated extra sharp Cheddar cheese
  • 1 t fresh grated nutmeg
  • 1 t paprika
  • 1/2 t cayenne (optional)
  • 2 bay leafs (remove before blending)
  • salt and pepper to taste, (remember to salt after the cheese goes in, for the cheese will add some saltiness to the soup

  1. Put carrots, celery, broccoli stalk pieces, and half the sweet potato in food processor until finely chopped.
  2. Melt coconut oil in heavy stock pot, add onions, and cook over medium heat for 5 to 7 minutes, add garlic, cook 30 seconds longer.
  3. Add vegetables from food processor, and cook for 4 to 5 minutes more.
  4. Add chicken or vegetable stock to the pot, and all seasonings except salt, and continue cooking until vegetables are tender.  Remove the bay leafs, and use a hand held immersion blender to puree the soup until smooth.
  5. Add all other liquids, and blend one more time. Return heat to medium low, making sure not to bring it to a boil.
  6. Cube the rest of the sweet potato in 1/2 inch pieces, add to the soup.  Cook 2 minutes, then add in the broccoli florets, and cook just until tender.
