Home Made Blueberry Muffins

What’s the perfect thing for your Mother’s Day Brunch this year? Why “made from scratch” Blueberry Muffins of course! Below is a pretty simple recipe to make this special treat. Who needs the boxed mixes when you can easily whip up the home made version instead?

Blueberry Muffins Ingredients:

MUFFINS:

  • 1 1/2 cups Flour
  • 3/4 cup Sugar
  • 1/2 tsp Vanilla
  • 2 tsp Baking Powder
  • 1/3 cup Vegetable Oil
  • 1 egg
  • 1/3 cup Milk
  • 1 cup Blueberries

TOPPING:

  • 1/2 cup Sugar
  • 1/3 cup Flour
  • 1/4 cup Butter
  • 1 1/2 tsp Cinnamon

Blueberry Muffins Directions:
  1. Preheat oven to 400.
  2. Grease muffin cups or line with muffin liners.
  3. In a small bowl, mix together topping ingredients. Keep cutting mixture with fork until consistency is like clumpy sand.
  4. In a large bowl, combine flour, sugar, salt and baking powder.
  5. Add in vegetable oil, milk add egg and mix until incorporated.
  6. Fold in blueberries.
  7. Fill muffin cups  and sprinkle with topping mixture.
  8. Bake for 30 minutes or until toothpick inserted in middle comes out clean.
