Homemade chicken noodle soup for big kids that is. This soup is so fast and delicious you’ll think twice about opening a can again. I used leftover rotisserie chicken making it even faster. The simplicity of this soup makes it a great recipe to have on hand and it’s freezer friendly. You can use any veggies you have on hand and it also works great with left over ham or turkey.

Homemade Chicken Noodle Ingredients:
  • 6  cups chicken broth, have more on hand if needed, broth should cover ingredients
  • 1 rotisserie chicken, cut into bite sized pieces
  • 1 package dried tortellini
  • 1 cup carrots, cut into bite sized pieces
  • 1 cup celery, cut into bite sized pieces
  • 1 onion, cut into bite sized pieces
  • 2 cups kale, large chop
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 TBSP olive oil
  • salt and pepper to taste

Directions:
  1. Heat oil in a 5 quart pan, saute carrots, celery and onion about 10 minutes. Add garlic, cook another 2-3 minutes.
  2. Add chicken, bay leaves, pepper and Kale. Cover with broth and simmer 20 minutes.
  3. In the meantime cook tortellini about 6 minutes, drain. Leave pasta a little firm.
  4. Turn soup off, add pasta.
  5. Serve with salad and crusty bread, enjoy!
