Irish Shepherds Pie

This is one of my favorite comfort foods. When I was a kid, my grandpa would make Irish Shepherds Pie for St. Patrick’s Day Dinner. When I make it now as an adult, it gives me that feeling of “home.” I hope you all enjoy this as much as I do!

Irish Shepherds Pie Ingredients:
  • 1 pound local fresh ground lamb or pork
  • 2-3 pounds of golden potatoes (depending on what you would like the ratio to be)
  • 1-3 cups frozen corn, thawed
  • butter, salt, pepper, paprika to taste

Irish Shepherds Pie Directions:
  1. Scrub, peel and chop the potatoes before adding to boiling water, then boil until fork tender and they fall apart, but not so long that they become water logged.
  2. Drain and mash by hand or with a mixer. If piping onto the top of the dish you’ll want an ultra fine or lump free mash. Set aside.
  3. Scramble and cook the ground lamb until fully done, then drain.
  4. This is a great time to season the meat, should you choose to.
  5. Place the meat in the oven safe dish or dishes if doing personal plates.
  6. Top with thawed frozen corn (tends to be sweeter and hold more of a snap when you bite, giving the dish more texture).
  7. Fit a piping bag with a large round tip and fill with the mashed potatoes.
  8. Pipe in small round dollops across the entire top of the dish.
  9. Dust with paprika and dab soft butter across the top.
  10. Place in preheated oven at 375 for 20 minutes.
  11. Let dishes cool for a few minutes before serving.
