Prosciutto Wrapped Shrimp make a great appetizer for parties or as the surf in a surf and turf meal. They never last long! I can eat them like candy but I don’t. The prosciutto is is just too high in sodium so I limit myself to 3 jumbo or 5 medium.

Easy tip to determine prosciutto to shrimp ratio, buy your shrimp first. A sign in the case should tell you how many shrimp you get per pound.
-If making as an appetizer I use medium shrimp. 3/4 lb = about 25 shrimp and 8 slices of prosciutto.
-If using large or jumbo shrimp you’ll need one slice prosciutto for every 2 shrimp.

Use a good quality prosciutto, you should be able to find it in the fresh deli department and don’t let the price per pound put you off. I paid just over $5.00 for 8 slices and had enough to wrap 25 shrimp. When used in moderation it’s an affordable treat.

Prosciutto Wrapped Shrimp Ingredients:
  • 3/4 lb medium shrimp
  • 8 slices prosciutto
  • 1 package fresh basil
  • 1 TBSP butter.buttery spread
  • 1/2 lemon

Directions:
  1. Line a cookie sheet with foil then set a rack on it, like a cooling rack.
  2. Turn your broiler to high and place an oven rack just under the broiler.
  3. Melt 1 TBSP butter or buttery spread with garlic powder, set aside.
  4. Once you get your prosciutto pieced out, lay a single basil leaf down then lay a shrimp down and roll it up.
  5. Lay shrimp on rack.
  6. Once you get them all rolled, broil for 2 minutes. Turn and broil another 2 minutes.
  7. Remove from oven and lightly brush with garlic butter.
  8. Squeeze fresh lemon over shrimp and enjoy!
