Crustless Quiche Recipe

This is my most favorite quiche recipe. My husband requests it all the time so the old adage, “Real men don’t eat quiche” is hogwash! I’ve actually adapted this recipe from one of my favorite cookbooks, Where’s Mom Now that I Need Her? I received this book when I moved into my first apartment, ek hem, 25+ years ago, and I use it all the time, still to this day!

The recipe below has been doubled (my husband REALLY likes this) to get a couple meals out of it and hence, placed in a 9 x 13 baking pan. If you just want one meal, just halve the ingredients below and put it in a pie plate to bake. The best part about this quiche recipe is you can change up the add-ins. Use sausage instead of bacon, omit onions, add tomatoes, etc. You could even make a lower fat version by using turkey bacon, low-fat cheese and skim milk. I’ve done it this way myself and it turns out great!

Crustless Quiche Ingredients:
  • 8 Eggs
  • 4 Cups Milk
  • 2 Cups Shredded Cheese (I use 3-chz blend)
  • 1 Cup Bisquick (or other baking mix)
  • 6 Slices Bacon Cooked & Crumbled (I cheat & buy pre-made bacon)
  • 1 Cup Chopped Onions & Peppers (I also cheat here & use frozen)
  • Optional Salt & Pepper Dashes to Taste

Quiche Directions
  1. Heat oven to 350 degrees.
  2. Grease baking dish (9×13 for dbl batch, pie plate for single).
  3. Sprinkle bacon, cheese, onions, peppers (and or other mix-ins) over the bottom of dish.
  4. Beat eggs & milk together; add remaining ingredients and beat until well mixed.
  5. Pour into baking dish over the top of cheese, bacon, etc.
  6. Bake for 50-55 minutes or until top is golden brown. Knife inserted in center will come out clean when done.
  7. Let sit 5-10 minutes before cutting.
  8. Serve & enjoy!
