Seared Meatballs with Garlic and Kale

Miniature seared meatballs are a popular party hors d’oeuvre with flavors including plain, swedish, and traditional marinara. These meatballs take a basic recipe and add kale for a healthy flavor combination that even the pickiest eaters will love. For a healthier version, bake the meatballs completely instead of searing them in fat on the stove.

Seared Meatballs Ingredients:
  • 1 1/2 pounds ground beef
  • 1/2 pound ground pork
  • 1/4 cup breadcrumbs
  • 2 eggs, beaten
  • 1/4 cup grated Parmesan
  • 1 cup kale, finely chopped
  • 1/8 cup parsley, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 tablespoon salt
  • 1 tablespoon freshly ground pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Seared Meatballs Directions:
  1. Preheat the oven to 325°F.
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, eggs, grated Parmesan, kale, parsley, garlic, salt, and pepper.
  3. Mix to combine, then roll into miniature spheres approximately two inches in diameter.
  4. In a large sauté pan, heat the butter and oil.
  5. Brown the meatballs on all sides, transferring them to a baking dish as they are seared.
  6. Bake at 325°F until fully cooked, about 10-15 minutes.
  7. Yield: 30 Miniature Meatballs
