Slow Cooker Beef Stew

Throwing dinner into the slow cooker and not having to worry about ‘what’s for dinner’ is the best! This Slow Cooker Beef Stew recipe is home cooked perfection, without having to slave over the stove for hours!

Slow Cooker Beef Stew Ingredients:
  • 2 tablespoons olive oil
  • Flour
  • 1-1/2 lbs stew meat
  • 1 small onion, diced
  • Butter
  • Fresh Thyme
  • Onion powder
  • Salt
  • Pepper
  • 2 tablespoons Worcestershire
  • 2 cups of water
  • 2 tablespoons cornstarch
  • 1 teaspoon gravy master
  • 6 large potatoes, chopped
  • 4 large carrots, chopped

Slow Cooker Beef Stew Directions:
  1. Over medium-high heat, add the olive oil to a large skillet.
  2. Add the onion and cook until translucent.
  3. In a medium bowl, toss the stew meat with the flour.
  4. Using a pair of tongs, shake the excess flour off the pieces of meat and place them in the hot skillet.
  5. Season with salt, pepper, and onion powder.
  6. Add the fresh thyme leaves – about a tablespoon.
  7. You want to sear the meat, but don’t need to worry about cooking it through. Turn the pieces occasionally so you get a  nice ‘crust’ on all sides.
  8. Add the butter to the pan and mix around.
  9. Increase the heat to high and add the Worcestershire sauce. This will help deglaze the pan and get all the yummy bits off the pan.  Stir the skillet around, then remove the meat, onions and juices to the slow cooker set on low.
  10. Add two full pieces of thyme to the top of the pot.
  11. Return the skillet to the stove and the water.
  12. Bring the water to a simmer then add in the gravy master.
  13. In a small bowl, mix the cornstarch and 1/4 cup of the hot liquid until smooth and thick. Whisk that mixture into the skillet until smooth.
  14. Return to a simmer, then pour over the meat in the slow cooker.
  15. Cook for 4-6 hours, stirring occasionally.  1 hour before serving, turn the heat to high.
  16. Add the potatoes and carrots.
  17. Remove the sprigs of thyme before serving.
