Gluten Free vs Non Gluten free (wheat) foods are making their way onto the shelves faster than ever before, but are they any good? Some actually are. I read an article about gluten's effect on auto immune disorders and since I have psoriasis I decided to do a 2 week experiment and cut gluten out of my diet. I saw a difference within days. At the end of the 2 weeks I was completely cleared up without using any medication. I also noticed that my joints didn't hurt anymore nor did I feel … [Read more...]

Homemade Chicken Noodle Soup Homemade chicken noodle soup for big kids that is. This soup is so fast and delicious you'll think twice about opening a can again. I used leftover rotisserie chicken making it even faster. The simplicity of this soup makes it a great recipe to have on hand and it's freezer friendly. You can use any veggies you have on hand and it also works great with left over ham or turkey. Homemade Chicken Noodle Ingredients: 6  cups chicken broth, have more on hand if … [Read more...]

Roasted Eggplant and Penne I saw this Penne with Roasted Eggplant recipe on TV and had to try it. I love it. I have about 1 cup of sauce left over that will be perfect to use for making bruschetta or use as a dip for vegetables. You can peel the eggplant, but I chose not too. The skin is loaded with nutrients and you'll be pureeing it so the skin breaks down great. Below is the actual recipe. I personally added the mint a little at a time to taste and ended up using about 1 TBSP. You can … [Read more...]

Sausage and Roasted Vegetables   This sausage and roasted vegetables recipe is easy, healthy and entirely up to you. This is my basic starter, but I'll add whatever I have in the fridge or use seasonal vegetables that are on sale like fresh green beans and asparagus. You can easily convert this to root veggies such as sweet potatoes, parsnips, carrots, turnips etc. As the vegetables roast, they caramelize and get sweet. This is a great one to add to your list if you are dieting … [Read more...]

Mom's Macaroni and Cheese Recipe Growing up Mom's macaroni and cheese was my favorite dish she made and it still is. The difference between her's and mine is she didn't add meat. Through the years I've played with this recipe to make it more of a main dish and less of a side dish and I have come up with a couple different variations that work very well. You can make her original recipe by simply omitting the meat. Don't let the tomato sauce throw you, it really works well. This recipe can … [Read more...]

Homemade Spaghetti Sauce, Sunday Gravy

Homemade Spaghetti Sauce I learned to make my Sunday gravy, or homemade spaghetti sauce as we know it, when I was 18 years old, by an older Italian woman from Sicily. She spoke no English at all and she communicated with me me by slapping my hand with a wooden spoon. I learned how to make the most important part of any recipe that calls for red sauce so the bruises were well worth it. This sauce freezes beautifully. Once you learn to make your own you will have a hard time finding a jar sauce … [Read more...]

Saving – It’s OK Not To Save 90% Every Time

It's OK Not Saving 90% I've certainly done better, but I'm still pretty happy with today's trip. Saving a good amount of money on several high dollar items in the same trip can be a challenge. Some of these were either on sale or I had store coupons getting ready to expire in the next couple of days and I wanted to be sure I used them being that they are products I use regularly. It's OK not to save 90% every time you go shopping, in fact it's unrealistic. Wags:      3 12 packs of coke … [Read more...]
