Tomato Pie – The Best Recipe EVER!

Homemade Tomato Pie

I don’t know if there’s a person on the planet that has tried Tomato Pie that hasn’t LOVED it! If you like tomatoes, this is definitely a recipe you want to bookmark or Pin. I’ve been making it for a few years now and each year it just tastes better and better. I always wait until the tomatoes are ripe and ready from the garden. There is no tomato quite like a garden tomato. If you have a garden, or frequent a farmer’s market, this is the time to get some big red tomatoes to set aside for this delicious pie. There’s nothing that quite says southern, like some warm tomato pie!

Ingredients:
  • 3 Fresh Tomatoes, sliced and cubed
  • 6 Fresh Basil Leaves, finely chopped
  • 1/2 Cup Green Onions, chopped
  • 1/4 Cup of Real Bacon Pieces
  • 1 Pre-Baked Pie Crust, cooled
  • 1 Cup of grated Cheddar Cheese
  • 1 Cup of grated Mozzarella Cheese
  • 1/2 Cup of Hellman’s Mayonnaise
  • Salt & Pepper to taste

Directions:
  1. Preheat your oven to 350.
  2. It’s time to fill that pre-baked pie shell. The first addition is the chopped green onions. I spread these out evenly in the bottom of the shell, and then layer the basil on top evenly.
  3. When chopping the tomatoes, it’s key to set them in a colander to drain. While the tomatoes are draining, I add my salt, pepper, and real bacon pieces and mix thoroughly into the tomatoes. The salt will help to drain the tomatoes the rest of the way, so your pie won’t be juicy.
  4. Add the tomato and bacon mixture into your pie shell evenly. This is key, as this is where you are forming the look of your pie. Now we’re ready for the topping!
  5. In a medium bowl, mix the cheddar and mozzarella cheese with the mayonnaise. It’s key to use Hellman’s as there is no taste quite like it!
  6. Stir this mix until well combined.
  7. I use wax or parchment paper for the next step to ensure that I don’t break the pie shell. You don’t have to do this step, but it will help. Form a ball of your cheese mixture, and then drop the mixture onto a sheet of wax paper. Take another piece and put it on top of your cheese ball. Then slowly and carefully form the cheese mixture flat and circular into a topper for your pie. Peel off the top piece of wax paper, and turn the mixture onto the top of your pie. Then, slowly pull the other piece off of your topping.
  8. Take a spoon and evenly cover your whole pie with the mixture to smooth it out.
  9. Bake at 350 degrees for about 30 minutes, or until the top is lightly browned.

Remove from oven and allow to cool on a wire rack. Serve Warm and Enjoy!
