Tortellini and Quick Tomato Sauce

Tomato sauce is best when simmered for long hours for tortellini, but a quick sauce can be just as tasty when you use the right ingredients. While I wish I had the time to make the real deal, this is good enough for me and I can whip it up in a matter of minutes compared to the all day affair of the other sauces I make.

Tortellini Ingredients:
  • 1/4 cup olive oil
  • 3 tablespoons diced onion
  • 4 cloves of garlic, smashed
  • 3 (28oz) cans whole, peeled roasted tomatoes
  • 1 small bunch of fresh basil
  • Kosher salt and freshly ground black pepper

Tortellini Directions:
  1. Over medium high heat, add the olive oil to a medium saucepan.
  2. Sauté the onion until almost done, then add the garlic in and cook until golden – take care not to burn the garlic!
  3. Roughly chop the roasted tomatoes and add them to the pan with about half the juices.
  4. Add the basil.
  5. Bring the pan to a boil, then reduce the heat and simmer for about a half hour uncovered until the sauce thickens.
  6. Season with salt and pepper as desired.
  7. While the sauce finishes, heat a large pot of water to boiling.
  8. Add in the frozen tortellini and cook per the package instructions.
  9. Serve immediately.
