Valentines Day Brownie-Cookie Ice Cream Sandwiches

This super-easy Valentines Day recipe starts with a standard brownie recipe, and prepares it in a new, fun way. To create the cookies, be sure you refrigerate the mixture and pan overnight, and make sure your oven is preheated (as directed in the method section). The batter needs to be very cold when it enters a hot oven, or they will spread too much.

Valentines Day Sandwich Ingredients:
  • 1 box brownie mix (including eggs, oil, etc. as needed on back of box)
  • 1 pint cherry ice cream
  • 1/2 cup red sprinkles

Valentines Day Sandwich Directions:
  1. Prepare the brownie batter according to the manufacturer’s instructions, but do not bake the brownies. Instead, refrigerate the dough and a sheet pan to bake them on overnight.
  2. Preheat the oven to 400°F. When the oven has fully heated, remove the cold sheet pan and brownie batter from the refrigerator. Working quickly, spoon the batter into small dollops on the sheet pan.
  3. Bake the brownie cookies at 400°F for 12-18 minutes, or until the “cookies” have firmed. Remove to cool.
  4. After the cookies have cooled completely, assemble to sandwiches by placing a dollop of softened ice cream on one cookie, and topping it with another cookie.
  5. Roll each cookie in the red sprinkles, sticking the sprinkles to the exposed ice cream.
  6. Eat immediately, or freeze for later use. If freezing these sandwiches, allow them to sit out for a few minutes before serving.
