Cheesy BBQ Chicken

With it being winter time, and being so cold, I figured what better way to spend those cold nights at home, then to make some good comfort food for dinner? I decided to go with an all-time favorite easy chicken recipe, Cheesy BBQ Chicken, that I’ve made for years. It’s simple, requires few ingredients, and tastes fantastic. Some people make it with their stockpiled canned tomatoes, we prefer to use fresh tomatoes, but know you can make this with many variations, and it will still be great.

Cheesy BBQ Chicken Ingredients:
  • 5-6 Boneless/Skinless Chicken Breasts
  • 2- Fresh Tomatoes
  • 1- Bunch of Green Onions/Scallions
  • 1- 8oz. Bag of Colby/Monterey Jack Shredded cheese
  • 1- Package of Bacon Pre-Cooked
  • 1- Bottle of Honey BBQ Sauce

Directions:
  1. In preparing this recipe, it’s key to grill the chicken thoroughly, and cook your bacon before preparing the dish. I put the bacon in the oven on a cookie sheet to cook while I cook the chicken. I flatten the chicken breasts, season with salt, pepper, and some garlic powder. I heat up the Panini Press and cook the chicken breasts in there until lightly browned and cooked through.
  2. In the meantime, while the chicken is cooking, I line my large cookie sheet with foil. I dice the tomatoes and green onions. When the bacon finishes, I crumble it up and set aside.
  3. After the chicken cooks, line the breasts on the foil lined cookie sheet. Add a tablespoon or so of BBQ Sauce to each breast. Then a small portion of cheese goes over the BBQ Sauce.
  4. Next, add your crumbled bacon, chopped tomatoes, and sliced green onions to the top. I pop this delicious dish into a 325 degree oven for about 10 minutes until the cheese melts, and it’s time to eat.
