Slow Cooker Chicken Salsa

Slow Cooker Chicken Salsa is one of my families ‘Go To’ recipes that we eat a couple times a month. There are a lot of little twists/additions, etc., that you can do with it to change it up some, but it always has that same great taste. Like all Slow Cooker Recipes, it’s a “start it and leave it” process so we still can have a healthy dinner even on our most hectic week nights.

Slow Cooker Chicken Salsa with Rice

Cook in a crock pot 6-8 hours on low

Serve with Birdseye Veggie and Rice


This is one of the simplest recipes you will ever make. All you do is put the Chicken in the bottom of the Crock Pot. Pour the Salsa over the top of the Chicken and put the Taco Seasoning on top of that. Cook for 6-8 hours.

Serve over Rice and Top with Sour Cream. Add in a bag of the Birds Eye Microwave Veggies and you have a complete meal with little work!

This meal is MAX $8.00 for our family of 4 to eat and we still have a lot of leftovers from the boys.

  • If the chicken is thawed, make sure to add in some other fluids to the mix. You can add some Chicken Broth or a can of diced tomatoes if you like more chunky.
  • You can used jar salsa or any variety of Salsa.  One of our other favorites is the Black Bean and Corn or the Mango Peach salsa from the Publix Deli!
  • I like the heat, but the rest of my family does not.  This is a mild recipe so don’t be afraid to spice it up some more!
  • Shredding the Chicken is also really yummy when serving over rice.  Before serving, pull the chicken out and cut it into smaller pieces, put it back into the mixture and serve.  It can be served immediately after that, or let it set as long as needed as well.

Like I said earlier, this slow cooker chicken salsa has a lot of varieties that can be done, so get comfortable with it and then mix it up! This can become a great staple dish for your family as well.

    Sounds great…. question though… 6-8 hours on low I hope…. I have found if chicken is overcooked in the crockpot it tends to taste like rubber…….

    • Gayle, yes it is on LOW for 6-8 hours, but I know what you mean about over cooking it. If that happens with this recipe that’s when you shred the chicken and put it over rice. It should fall apart with a spatula.

      • Time for this recipe again… it is wonderful! Any more crockpot chicken recipes in your stash???

        • Honestly, when we do anything crockpot chicken it is typically a variation of his same recipe. Instead of salsa you can use diced tomatoes (basically the same thing) and maybe an hour before you serve dump in a jar of sauce and any other spices you like in pasta and serve it with whatever style pasta you want for the night (penne, angel hair, elbow) .

          Another variation is to cook the chicken with chicken stock and again maybe an hour or 2 before serving you dump in a can of Progresso White Kidney Beans. We usually sneak in corn because our oldest hates his veggies. Before you serve you use a potato smasher and smash up the beans a little and break up the chicken some.
