Banana Bread Recipe with a Twist

My Unique Banana Bread

Years ago I was looking for a new recipe for banana bread. The one that I had been using was just too dry. My husband had bought me some “cookbook CDs” for the computer and I came across a great recipe. I just added my own little changes, and it is so delicious! The best part is that one of the ingredients is vanilla yogurt. It makes for very yummy bread!

Banana Bread Ingredients:
  • 1 cup of very ripe banana (the more ripe the better. I put mine in the freezer when they are getting too ripe, then when I gather enough I take them out to thaw and make up a loaf. I find that it takes about 3 medium sized bananas for one loaf.
  • 1/2 cup of sugar
  • 1/2 cup of plain non-fat yogurt ( I like to use vanilla)
  • 1/4 cup butter-melted
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 egg white
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans-toasted

Directions:

Pre-heat oven to 350 degrees. Combine the banana, sugar, yogurt, butter, vanilla, egg, and egg white in a large bowl or mixer and and blend together.

Next, combine the four, baking powder, baking soda, and salt in a separate bowl.

Then combine the flour and banana mixture together. Using your mixer on low until just moistened.

Set aside the completed banana dough in order to toast the pecans. In a pan, put 1/4 cup chopped pecans, 1 teaspoon sugar, a few shakes of cinnamon, and 1 tablespoon of water into a pan. Mix together for about 1-2 minutes so that everything is blended together. The pecans will look like they have a glaze on them.

When the pecans are done, add them to the finished banana bread dough, and stir in.

Then spray a loaf pan with cooking spray and coat it with  flour.  Using a spoon/spatula transfer the banana bread dough into the loaf pan.

Bake at 350 degrees for 1 hour or until a wooden toothpick comes out clean when inserted in the middle of loaf.

I immediately take my bread out of the loaf pan and wrap in a couple of sheets of wax paper. I learned this during a cake decorating class. It keeps the moisture in the bread instead of letting it all escape. It probably will need to cool like that for about 30-60 minutes depending on how you like to eat it. We love to eat it warm! I keep it wrapped up until in the wax paper at all times so it stays moist.  After it has cooled just pop a slice in the microwave for 15-20 seconds to warm it up again. My family loves this yummy banana bread and I really love how it uses vanilla yogurt.  Also when you are baking this-it will make your house smell so great. It’s an instant air freshener!  Grab your mixing bowls, and loaf pan then fire up the oven to see for yourself why this is a favorite at my house!
